Ajitama (Marinated Egg)
Boil Eggs:
- Poke a hole in an egg.
- Boil for 6-7 minutes.
- Cool in an ice bath and peel.
Prepare Tare for Ajitama:
- In a small pan, combine:
- 1 tbsp soy sauce
- 1 tbsp sake
- 1 tsp sugar
- Heat until small bubbles form.
- Roll peeled eggs in the sauce for 4-5 minutes until colored.
Ramen Preparation
Ingredients:
- Green onions (white part preferred)
- Small knob of ginger
- 1 tbsp Japanese soy sauce
- 1 tsp Chinese or Japanese chicken stock powder
- 1 tsp or 1.5 tsp lard (or chicken fat)
Prepare Toppings:
- Slice green onions.
- Grate a small amount of ginger.
Cook Noodles:
- Boil two pots of water (one for noodles, one for soup).
- Cook ramen noodles as per package instructions.
Prepare the Bowl:
- In a bowl, add:
- 1 tbsp soy sauce
- 1 tsp chicken stock powder
- Sliced green onions
- Small amount of grated ginger
- 1-1.5 tsp lard
Assemble Ramen:
- Add 300 ml (1.25 cups) of hot water to the bowl.
- Stir well.
- Add strained noodles to the bowl.
Finish and Serve:
- Top with ajitama, green onions, and nori.
- Adjust soy sauce to taste.
